1. Caribbean Jerk Wings
Bold and Flavorful Chicken Wings
These wings are packed with smoky, spicy goodness, perfect for gatherings or a flavorful dinner.
Dry Rub:
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons cayenne pepper
2 teaspoons smoked paprika
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon salt
1 teaspoon ground thyme
½ teaspoon nutmeg
½ teaspoon allspice
½ teaspoon ground cloves
Combine all ingredients and season the chicken wings generously, setting aside at least 2 tablespoons of the dry rub for later.
Jerk Paste:
3-5 habanero peppers (adjust for spice level)
½ cup red onions
4 garlic cloves
2 teaspoons white vinegar
2 teaspoons soy sauce
1 tablespoon olive oil
1 teaspoon black pepper
1 teaspoon fresh ginger
1 tablespoon brown sugar
1 teaspoon salt
½ teaspoon thyme
½ teaspoon nutmeg
½ teaspoon cinnamon
½ cup water
Blend all ingredients until smooth. Marinate the seasoned chicken wings in this paste for at least 2 hours.
Cooking Instructions:
Heat 2 tablespoons of butter on the stove.
Add the wings and cook over medium heat for 3-4 minutes per side. Then reduce the heat and simmer for 15 minutes or until the chicken reaches 165°F.
Grill or air fry for a crispy finish. Freeze any extra wings for a quick meal later.

Ingredients for Chicken:
2 chicken breasts
½ cup finely chopped pistachios
¼ cup breadcrumbs
1 tablespoon Parmesan cheese
Salt and pepper to taste
Wrap Ingredients:
2 tortillas
Romaine lettuce
1 avocado
1 tablespoon lemon juice
Shredded Parmesan cheese
1 tablespoon olive oil
Caesar dressing
Bacon (optional)
Instructions:
Preheat the oven to 375°F.
Coat chicken breasts with a layer of Caesar dressing, then press into the pistachio mixture (pistachios, breadcrumbs, and Parmesan).
Bake for 20 minutes or until the chicken reaches an internal temp of 165°F. Let cool before slicing.
Toss romaine lettuce and avocado with lemon juice, olive oil, and Caesar dressing. Add shredded Parmesan and bacon if desired.
